A Pinch of Spotlight: Taste of Tomorrow Exhibition

EFFA launches "A Pinch of Spotlight" — a new space to highlight standout projects across the flavour world. First up: Taste of Tomorrow, an agri-food exhibition by The Mills Fabrica in London, exploring sustainable innovation in food and agriculture, from precision fermentation to flavour-forward alternatives.

Taste of Tomorrow marks The Mills Fabrica’s inaugural focus on the agri-food sector, after previous exhibitions centred around textiles. The exhibition offers a holistic overview of the food innovation landscape, addressing both the impact of food production on the planet and the emerging solutions being developed to meet future needs.

The exhibition is structured around two key themes: innovations for agriculture and next-generation foods. Agricultural innovations on display include advances in soil regeneration, biofertilisers, methane reduction technologies for cattle, and crop breeding. In the area of next-generation foods, the exhibition explores how technologies such as solid-state fermentation, biomass fermentation, and precision fermentation are being used to create alternative food ingredients. Examples include coffee alternatives developed using flavour chemistry, sweet proteins that are significantly sweeter than sugar without calories, and precision-fermented animal-free dairy products.

Flavour plays a central role in these innovations. As highlighted during discussions with the Fabrica X team, maintaining the familiar taste and aroma of traditional products is essential for consumer acceptance. Technologies showcased at the exhibition often aim to replicate the sensory experience of foods like coffee, cocoa, and dairy, ensuring that sustainability improvements do not come at the expense of enjoyment.

Taste of Tomorrow also includes an educational component, engaging university-level students and academic institutions to raise awareness about the future of food. Additionally, a concept market has been created to provide visitors with the opportunity to explore sustainable consumer products related to food, homeware, and fashion.

Open until the end of July, the exhibition reflects growing interest in innovations that address both planetary health and, increasingly, human health, while emphasising the importance of taste and texture in driving consumer behaviour.
